Fruit & Grain Salad with Nectarines, Blueberries, Radishes, and Tomatoes is a refreshing end-of-summer dish that keeps you craving for more. Fragrant with summer's fresh produce, it is sweet, salty, spicy, juicy.

Choose your favorite grains, nuts, seeds, and fresh fruit. Combine them with fresh herbs and a light citrus salad dressing. Great for family gatherings, parties, and cookouts, double or triple this recipe. Then divvy it up and serve some with diced grilled chicken, grilled salmon or shrimp, tempeh or tofu, or just as is in all of its seasonal goodness. Enjoy!


4 servings.

4 cups boiled grains (Combine or single grain: barley, bulghur, couscous, Israeli couscous, red quinoa, farro)
1 nectarine or peach, diced
1 handful fresh blueberries
2 radishes, sliced
1 handful tiny cherry tomatoes
1 small bunch Italian parsley leaves, coarsely chopped
1 small handful shelled pistachios (1 ounce or 28 g)
1 small handful pine nuts
Salt to taste
Ground white pepper or cayenne red pepper to taste

Dressing:
Extra-virgin olive oil
Fresh citrus juice (tangerine or orange)
Fresh citrus zest (grated tangerine or orange peel)


Combine the salad ingredients in a large bowl. Combine up to one hour in advance of serving so the cooked grains can soak up some juices if you wish. Cover and refrigerate. 15 minutes before serving, remove from refrigeration to remove the chill.

Whisk the olive oil and fresh citrus juice and zest together until emulsified. Toss the dressing with the salad. Season to taste with salt and pepper. Enjoy any time of the day, even for breakfast!
