At the Athens Central Market are stacks of fresh grape leaves held in place by green beans. Pickled, baked, boiled, steamed…grape leaves are integral to Greek cuisine. They are rolled around rice and ground meat filllings and cooked, creating Dolmades or Stuffed Grape Leaves. These leaves also line casseroles and are used as wrapping for cheese, chicken, fish, grains, and produce. About 14 calories for 5 leaves, grape leaves are a rich source of fiber, vitamins A and K, calcium, and iron.
