Grilled Leeks with Burrata on Bruschetta

Celebrate Spring by making Grilled Leeks with Burrata on Bruschetta. It's delicious! Serve as an appetizer or light meal.
 

Grilling time is about 10 minutes, depending on the size of the leeks.

Young spring leeks, trimmed
Burrata
Extra-virgin olive oil
Sea salt flakes or coarse Kosher or sea salt to taste
Black pepper, freshly and coarsely ground, to taste

Bruschetta:
Country-style bread, sliced
1 garlic clove, split in half


Leeks: Rinse the leeks under cool running water. Leave whole if narrow diameter or split lengthwise if diameter is 3/4-inch (2-cm) or more, for faster cooking. Preheat a grill pan or the outdoor grill. Lay leeks flat and grill for about 10 minutes, turning over as needed. Transfer to a large plate and reserve. Drain the burrata.

Bruschetta: Preheat a grill pan or the outdoor grill. Grill slices of bread on both sides. Lightly rub the cut side of a garlic clove over one side of each grilled bread slice while hot.

Top with the grilled leeks. Add a dollop of creamy burrata and drizzle with olive oil. Season to taste with salt and pepper. Enjoy every bite!
