Handmade yeast bread is a daily staple, especially essential to people of Cairo. Similar to pita but made with whole wheat flour, Egyptian aish baladi flatbread is baked in brick ovens. Notice the red color inside the oven? It is scorching hot! So it takes only a few minutes for the bread layers to rise and separate creating airy baked pockets. It is wonderful!
